01 / The Origin
Why "Sembilan"?
The name Toko Kopi Sembilan originates from the opening hours of our very first setup, a modest roadside coffee cart that began brewing right at 9:00 PM. Brewing night after night became our foundation in understanding coffee flavor profiles, honing brew precision, and connecting directly with what coffee enthusiasts truly appreciate. Today, that journey has evolved into a dedicated roastery in Kutorejo, Tuban, focused on roasting curated beans to SCA standards, while preserving the name Toko Kopi Sembilan as our core identity and a lasting reminder of where our first step began.
