Green Bean Hand-Sorting
Green coffee beans are sorted by hand to remove defects, broken beans, and impurities before entering the roaster.
Roast Profile Control
Temperature and roast time are monitored to develop balanced sweetness, natural aromas, and even bean development.
In-House Flavor Cupping
Every roast batch is cupped and tasted to SCA standards before packaging and serving at the coffee bar.

Crafted in Tuban by Muhammad Fahad.
Muhammad Fahad started Toko Kopi Sembilan from a roadside coffee cart in Tuban in 2021, brewing from 9 PM. Today, he runs the roasting facility in Kutorejo backed by official SCA CSP Intermediate Barista & Roasting credentials. His roast profiles and curation are backed by 2nd Place at Jogja Coffee Roasting FRCC 2026 and 2nd Place at Future of Milk Competition 2025.
